What's the secret to
the states best pies....

You have to go no further to find the answer to that question than Mark and Ron Hobbs of Sunrise Bakery at the Ettamogah Pub complex, Palmview.

Sunrise Bakery this month won the best meat pie in Queenland and the best Red Meat Gourmet Pie in Australia at the Great Aussie Pie Competitionin Sydney.   And their secret? “I know everybody says it,’’ says Mark, “but really, it’s all about getting premium quality meat from a local butcher – Micks Meat Barn at Kawana – on a consistent basis.

“As well, we use vegetable margarines in the pastry.   A lot of people use animal fat but that makes the pie stick to the top of your mouth.   With ours it’s a nice feeling when you eat it.

“The other big important part is that we have a good team behind us and they follow the secret recipe religiously.   It’s just basically getting the guys to folllow the system.  You get the same great pie day in, day out.   Mark’s mum and his dad experiment at home with various recipes.   Any promising combinations are transferred to the bakery.

“It’s a tough job, but somebody’s got to do it,’’ said taste tester Ron.  The Fine Food Fair held in Sydney staged the hotly contested competition.   There was a record number of entries with over 1450 pies judged over five days by 15 lucky judges.   Sunrise Bakery entered and took home First place in Australia in the Red Meat Gourmet with its Ned Kelly pie.  “Our Ned Kelly pie consists of a pastry bottom filled with our beef steak filling, followed by a juicy slice of tomato, a full egg and then it is topped with bacon and cheese.

“We got pipped on the line by one third of a point in taking out Australia’s Best Meat Pie for our plain beef steak pie,’’ said Mark.  “They had to do a countback.  “But it still means that for the second year running we have Officially Queensland’s Best Meat Pie right here in the hinterland.”
